6 cups home made chicken stock (see index)
3 cups roasted red bell pepper sauce (see index)
1 28oz can whole peeled tomatoes (hand crushed)
salt and pepper to taste
1 large zuccine diced (seeds removed)
1 large yellow squash (seeds removed)
1 large onion (diced)
1 large red bell pepper (diced)
1-1/2 lbs pre-cooked chicken (cut up bite size)
1 lb dateline short pasta or 1-1/2 lb of cheese tortellini

1. In a large stock pot heat stock, red bell peppers sauce, and tomatoes. add salt and pepper to taste.
bring to a low simmer.
2. Add red bell pepper and simmer for 10 min on low.
3. Add onion,zuccini,yellow squash and chicken. simmer on low for 15 more min.
4. Add pre-cooked pasta to soup
5.Top with grated cheese to taste
