1. onion chopped
2 bay leaves
2 carrots chopped
2 celery stalks chopped
2 tbsp peppercorns
2 chicken carcasses from 6-8 lb chicken
2 gallons of water
salt to taste

Directions:
Directions:
1. Bake chicken cacasas in oven till golden brown on 350f for about an hour. use a sheet pan.
2. remove and place all the chicken parts including any drippings into a large stock pot.
3. add the water,onion, bay leaves,carrots,celery stock,and peppercorns.
4. bring to a boil and reduce heat to a simmer on lowheat for about 3-4 hours.
5. strain using a pasta colander and some cheese cloth into a large bowl.6.
6. lightly salt to taste
