1pounds smoked trout fillets
2 sticks butter, softened
juice of 1 lemon
2 tbsps creamed horseradish, large pinch cayenne pepper
large pinch freshly grated nutmeg
3/4 cup sour cream
freshly ground black pepper
4 tbsps chopped chives
Pita bread triangles
Capers
Chopped red onion

Directions:
Directions:
Skin the trout removing any bones.Flake half of the trout into a food processor, reserving the rest for later.
Add the butter, lemon juice, horseradish, cayenne pepper, nutmeg and a good amount of black pepper.Pulse to combine.
Transfer the mixture to a bowl and flake in the remaining trout fillets. Fold in the sour cream , add the chives and stir well to combine. Check seasonings and add more lemon juice if desired.
Put into small serving dish and serve with warm pita bread, capers and red oinion. This freezes well.
