1 (8 oz) can crushed pineapple, undrained
2 1/2 c all purpose flour
1 T baking powder
1/4 t salt
3/4 c sugar
1/3 c milk
1/3 c butter or margarine, melted
2 large eggs
1/2 t vanilla extract
1/3 c firmly packed brown sugar

Directions:
Directions:
Drain pineapple, reserving 1/3 c juice; set both aside. Combine flour and next 3 ingredients, meake a well in center. Stir together reserved pineapple juice, milk, and next 3 ingredients; add to dry ingrdients, stirring just until moistened. Spoon into a lightly greased 13x9 inch pan. Top with pineapple and brown sugar. Bake at 350 degrees for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack. Yield 15 servings.
