4 slices bacon cut in 1" pieces
1 1/2 cups water
1 egg - beaten
2 Tbs vinegar
3 Tbs flour
1/2 tsp salt
2 Tbs sugar
pinch of dry mustard (opt)

Directions:
Directions:
Fry the bacon til crisp; then remove from pan leaving drippings in the pan. Remove the pan from the heat. Mix the other ingredients in a gravy shaker or whisk vigorously til smooth; then pour into the pan, return to the medium heat and bring to a boil stirring constantly. Add 1/2 of the cooked bacon to the hot dressing. Pour hot dressing over dandelion greens, endive or lettuce just before serving and sprinkle with the remaining cooked bacon. Serve immediately.
