Mixed Greens and Apples with hot Cider Dressing Recipe

Ingredients: 3/4 lb thin bacon slices 1/3 c vegetable oil 8 large shallots, thinly sliced 3 c unsweetened apple cider, boiled until reduced to 1/3 cup 3 tbsp cider vinegar 2 tsp golden brown sugar ground pepper 1/2 lb jicama 4 heads belgian endive 1 large head boston lettuce, torn 1 head curly endive, torn 6 large green onions, cut diagonally 1 medium granny smith apple, unpeeled, cored and cut into matchstick julienne

Directions:Cook bacon in heavy large skillet until crisp. Transfer bacon to paper towels and drain. Crumble bacon into 1 inch pieces. Pour off all but 2 tablespoons fat from skillet. Add vegetable oil to skillet and heat 1 minute over medium heat. Add shallots and cook until golden brown, stirring frequently, about 15 minutes. Add reduced cider, vinegar and sugar and simmer 1 minutes. Season generously with pepper. Taste, adding more vinegar if sharper flavor is desired. Set aside. Peel jicama and cut into matchstick julienne. Cut belgian endive diagonally into 1/2 inch wide slices. Toss with lettuce, curly endive and green onions in large bowl. Toss jicama and apple with salad. Bring dressing to boil. Pour over greens; toss well. Divide salad among plates. Sprinkle bacon over and serve. |
