4 Baked Yukon gold potatoes.
1/2 t. Salt
1/4 t.Pepper
1/2 c. Shaved Parmesan cheese
1/8 c.olive oil

Directions:
Directions:
Pre-heat oven to 350º
Spray baking sheet with pan spray. Place potatoes on sheet. Take a saucer and smash the potatoes until they are aprox. 1/2 in . thick. Drizzle with olive oil. Sprinkle with salt, pepper and parm. cheese. Place into oven for 20-30 min. or until they are chrispy and golden brown. Serve with sour cream and chives.
