2- Cups Flour
2 – Cups Sugar
1 – Tbs Cinnamon
2 – tsp Soda
1 – tsp Baking Powder
1 – tsp Salt
1 - Cup Oil
2 – tsp Vanilla
3 – Eggs
2 – Cups grated unpeeled zucchini
1 – Cup Raisins
1 ˝ – Cups Nuts

In large bowl of mixer, combine all dry ingredients. Add oil, vanilla and eggs. Beat at medium speed until well mixed. Stir in zucchini, raisins and 1-cup nuts. Pour into greased 13X9X2 inch pan. Sprinkle with remaining nuts. Bake in preheated oven at 350 degrees, for 50 minutes, or until pick inserted in center comes out clean. Cool in pan on rack and frost with a cream cheese or caramel frosting.
