5 T. butter or margarine, separated
½ lb. mushrooms, coarsely chopped
About 16 (1/2 c.) finely crushed plain saltines
¾ c. chopped green onions
2 c. shredded Jack cheese
1 c. cottage cheese
3 eggs
¼ t. cayenne pepper

Directions:
Melt 3 T. butter in a skillet over medium heat. Sauté the
mushrooms until tender. Remove from the heat and stir in the
cracker crumbs. Press into the bottom and along the sides of
a greased 9-inch pie plate. Melt the remaining 2 T. butter in a
skillet. Add the green onions and sauté quickly. Spread over
the crust. Sprinkle with cheese. Combine the cottage
cheese, eggs, and cayenne in a blender or food processor.
Blend well. Turn into the prepared mushroom crust. Sprinkle
with paprika. Bake at 350 degrees for 35-45 minutes. Let
stand about 10 minutes before serving.
