3 Eggs
1 Cup Cooking Oil
2 Cups Sugar
3 Cups Zucchini, Peeled & Grated
2 tsp. Vanilla
3 Cups Flour
1/4 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
3 tsp. Cinnamon
1/2 Cup Nuts, Chopped

Directions:
Directions:
Preheat oven to 325.Beat eggs until light and foamy. Add next 4 ingredients. Mix lightly but well. In a separate bowl mix dry ingredients. Add flour mix and blend. Add nuts. Grease and flour two loaf pans. Pour into prepared pans. Bake for 1 hour. Remove pans from the oven and immediately remove bread from pans. Place on wire racks to cool. May be Frozen.
