1 lb hot owens sausage
1/2-1 onion chopped
4 oz sliced mushrooms
salt & pepper
6-8 eggs
3 Tbsp sour cream
picante sauce
4 oz shredded cheddar
4 oz velveeta shreds
4 oz mozzarella shredded

Directions:
Directions:
Cook the sausage, onion and mushrooms together, drain. Beat eggs with sour cream in blender for 1 minute. Pour eggs in 2 qt. casserole (greased). Bake in 400º oven until "softly set" (4-7 min). Spread 6-10 Tbsp picante sauce over eggs. Pat sausage over picante sauce. Add cheeses on top. Can make ahead and refrigerate. Bake at 325º for 30 minutes.
