Hawaiian Kebabs Recipe

1 TBSP. Soy Sauce
1/4 Cup Pineapple Juice
1/2 tsp. Garlic Powder
1 tsp. Ground Ginger
1/4 tsp. Pepper
1/4 tsp. Salt
2 TBSP. Corn Oil
14 oz. Chicken Breast, Cut Into 1- inch Cubes
2 Cups Pineapple Chunks, Packed in Juice
2 Medium Green Bell Peppers, Cut into Chunks
16 Medium Mushrooms
8 Cherry Tomatoes

Combine first seven ingredients in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Let cool. Pour mixture into a shallow dish and add chickern, tossing gently to coat. Cover and marinate 1 hour in the refrigerator. Stir mix occasionally. Remove chicken from marinade, reserve marinade. Alternate chicken, pineapple, green peppers, mushrooms, and tomatoes on eight skewers. Grill over hot coals for 20 minutes or utnil done, turning and basting frequently with marinade.
