1 c. sour cream
1 8 oz cream cheese, softened
4 T. butter softened
garlic powder to taste (1/8 - 1/4 tsp)

Directions:
Boil potatoes until tender when pierced with fork (about 10-15 minutes.) Drain & Mash (do not add milk, just mash the potatoes.) Gradually add the remaining ingredients (except paprika) and mix until well blended. Pour into a well greased casserole dish. Dot with butter and sprinkle with paprika. Bake at 350º for 25-30 minutes.

Can make day before and keep in refrigerator until ready to bake. Take cold casserole out of refrigerator about 15 minutes before placing in hot oven. Add about 30 extra minutes baking time.

Personal Notes:
I have split a batch and froze the extra. It is recommended to use within 1 month.
As an option, top with grated cheese in place of butter.
