2 lbs pork, cubed
1/2 TBS oil, as needed
3 medium potatoes peeled cubed (red potatoes hold up better with the long cooking time)
1 1/2 large onion, chopped
2 cloves fresh garlic mashed
1/2 tsp fresh oregano chopped
1 tsp ground cumin
2 10 oz. cans of diced tomatoes
8 fresh-roasted green chilies, peeled & coarsely chopped
2 cups chicken broth

Directions:
Directions:
Brown cubed pork. Add potato chunks and brown in same pan as pork. Add onions to same pan along with the garlic. Saute onions 2 minutes. Add herbs, tomatoes, green chiles, chicken stock and simmer covered for an hour or until meat is fork tender. If liquid evaporates too quickly, add more, 1/2 cup at a time.
