cold water
6 oz. salt pork, chopped fine or 1/2 lb, diced
6 large potatoes
1 large onion, chopped
2 c. water
1 qt. half and half, divided
6 tbsp. flour
1/2 c. butter
8 oz. Velveeta, cubed
8 oz. shredded cheddar
salt to taste
fresh ground pepper, to taste

Directions:
Directions:
In frying pan, fry salt pork or bacon until crisp. Drain on paper towel; set aside. Boil potatoes and onion in water until tender (use enough water to just cover potatoes). Blend 1/4 c. half and half with flour. Stir into potatoes; cook about 5 minutes. Add remaining half and half and butter. Mash some of the potatoes, leaving some pieces in cubes. Add velveeta and cheddar. Bring to a simmer; do not boil. Stir constantly.

My mom used to make this when we were growing up and it was great comfort food in the winter. She was an awesome cook.
