7 oz. butter
1 cup yellow onion
7 oz. flour
2 qts chicken stock
1 TBS shrimp soup base
2 tsp red pepper
1 qt cream
3/4 cup white wine
Corn tortillas
Shell fish/ shrimp, scallops, crawfish or crab all or any combination
Cheese amount and kind your choice Monterrey jack, cheddar or any melting cheese

Melt butter and saute onions, add flour and cook 5 minutes. Add stock with soup base, cream,and wine, stirring constantly. Set aside. Cook shell fish in butter set aside. Dip tortilla in Cream sauce until it is warm; take it out with tongs and place it on a plate, fill with cheese and roll up. Continue with all tortillas; place rolled tortillas on individual plates or baking dish. Pour remaining cream sauce over top and sprinkle with seafood. Heat in oven to melt cheese.
