2 10-oz. pkg. frozen chopped spinach, thawed and drained
2 c. ricotta or cottage cheese
2 eggs, beaten
1 c. chopped onions
2 garlic cloves, crushed
2 T. olive oil
2 lb. ground beef
1 lb. Italian sausage
2 6-oz. cans tomato paste
2 cans water
1 sm. can tomato sauce
1 t. dried basil (fresh is best)
salt and pepper to taste
½ t. dried oregano
½ c. fresh parsley
1 lb. lasagna noodles
1 lb. sliced or grated mozzarella cheese
1 c. grated parmesan cheese

Directions:
Directions:
Mix spinach, ricotta, and eggs and set aside. Saute onions
and garlic in oil until tender. Add ground beef and sausage
and cook until redness disappears. Add the tomato paste,
water, tomato sauce, basil, salt and pepper, and oregano. Mix
well, then bring to a boil. Lower heat and simmer, uncovered,
for at least 30 minutes. Mix in parsley and remove from heat.

In a lasagna pan, layer lasagna noodles, spinach mixture,
meat sauce, mozzarella cheese, and parmesan cheese.
Repeat layers. Bake at 375 degrees for 30 mn., or until hot
and bubbly.
