6 c. water
2 c. bow-tie/medium shell pasta
1/2 t. garlic, minced (adjust to taste)
1 t. extra virgin olive oil
1-2 T. balsamic vinegar
2 c. fresh spinach, torn into pieces
1 c. fresh radicchio, torn into pieces
1/4 c. fresh grated Parmesan cheese (use a high quality cheese for best flavor)

Directions:
In a large saucepan, bring water to a boil over high heat. Add pasta. Reduce heat slightly and boil, 8 minutes, uncovered. Cook until al dente. Drain.
In a small skillet, cook garlic in olive oil over medium high heat until tender, about 1 minute. Stir in vinegar. Place spinach and radicchio in a large bowl. Add pasta. Pour hot garlic mixture over pasta and greens mixture. Toss to mix well. Season to taste with salt and freshly ground black pepper. Sprinkle with Parmesan cheese.
