Divinity Recipe

2 c. sugar
1/2 c. hot water
1/2 c. white corn syrup
1/8 tsp. salt
2 egg whites
1 tsp. vanilla
1 cup nuts (optional)

1. Pour hot water into smooth sauce pan, then carefully add sugar in center of pan. So sugar crystals will not lodge on side of pan.

2.Cook for the first few minutes (until syrup boils) with lid on. This will wash down crystals that may form in the cooking process.

3. Then the mixture will begin to boil, beat egg whites until stiff.

4. Cook to the firm ball stage (248)

5. Remove from heat and pour in a thin stream over beaten egg whites beating constantly. Continue beating until mixture is dull looking. Shape when dropped from a spoon on waxed paper. Nuts may be add at this stage.
