1 large head of cauliflower
1/4 c. diced green peppers
1/3 c. flour
1 t. salt
2 T chopped pimento
1 (12 oz) can sliced mushrooms
1/4 c. butter
2 c. milk
1 c. shredded swiss cheese

Directions:
Directions:
Break the cauliflower into medium size florets; cook in boiling water until tender crisp, about 10 min. Drain well, set aside. In 2 quart saucepan, saute green peppers in the butter until tender. add the mushrooms. Blend in flour gradually, stir in milk. Cook, stirring constantly over medium heat, until the mixture is thick. Stir in the salt, cheese, and pimento. Place half the cauliflower in a buttered casserole. Cover with half the sauce, add remaining cauliflower, top with remaining sauce. Bake at 350º for 30 minutes.
