1 4.3 Oz. Pkg. Hormel Premium crumbled bacon
1/4 Cup Olive Oil
1 1lb 12Oz. Can Premium ready-cut diced tomatoes, drained ( I use S&W)
5 Cloves fresh garlic
1 tsp. crushed red pepper ( more if you like spicy)
1/4 tsp. salt&pepper
3 fresh basil leaves chopped
1 med. size onion, chopped small
Zest of one lemon
3/4-1lb of cooked,drained & rinsed Penne Pasta.

In a heavy skillet, fry the garlic, onion and lemon zest, in olive oil until tender. Add the chopped bacon and cook a bit, but do not let the bacon get too crispy. Add the tomatoes and cook/simmer for about 15-20 minutes longer. Add the red pepper, salt and pepper and fresh chopped basil. Let cook until all is tender and color darkens. Add sauce to 3/4-1 lb of cooked Penne Pasta.

Our family first discovered this recipe while on Safari in Kenya, Africa. We stayed at a lodge called Elsa's Kopje, (pronounced Elsa's Copy) and we were served this pasta for lunch. The property the lodge is built on is the legendary home of the famous lion "Elsa" from the movie "Born Free". This is a terrific dish from a most Magical place. Enjoy!
