Ingredients: 1 1/2 cups all purpose flour 1 tsp baking soda 1/2 salt 1/2 cinnamon 2 1/2 cups old fashioned oats 1 cup unsalted butter, softened 1 cup firmly packed light brown sugar 1/2 cup granulated sugar 2 large eggs 1 TBS honey 2 tsp vanilla 1 1/3 cups dried cranberries 1 cup white chocolate chunks 1 cup pecans, toasted

Directions:Preheat oven to 350ºF. Whisk flour, baking soda, salt and cinnamon in a bowl; stir in oats. Set aside. Beat together butter and both sugars until pale and fluffy. Beat in eggs one at a time. Add honey and vanilla; beat until blended. Add the flour in two additions, beating until just combined. Stir in cranberries and chocolate and nuts. Drop by heaping TBS about 2 inches apart onto cookie sheets covered with silpat or parchment paper. Bake until the center of the cookie are soft, about 9 to 11 minutes. Let cool on the sheets for 5 minutes then transfer to wire rack to cool. |
