1 lb orzo
3 tsp olive oil
1 tsp cider vinegar
Pinch of cayenne & salt
1/2 cup sun dried tomatoes in oil cut into matchstick slices
1/2 cup basil leaves cut in ribbons
Ground pepper to taste
4 oz. feta cheese

Directions:

Cook orzo in boiling water until al dente. Rinse in cold water and place into a 3 qt. bowl. Add olive oil, vinegar, cayenne, salt, pepper, sun dried tomatoes, basil ,pepper and feta. Toss gently and chill. Toss with 1/2 lb. mixed greens and serve with crusty French bread. Can be made ahead; wait until serving to toss with greens.
