Ingredients: 3 cups flour 1 tsp baking powder 1 tsp baking soda 1 1/2 tsp salt 1 tsp cinnamon 3/4 cup vegetable oil 4 cups peeled and coarsely chopped apples 2 tsp vanilla 2 eggs 2 cups sugar 1 1/2 cups chopped nuts toasted for cake and topping

Directions:Measure the dry ingredients and sift together. Add oil, apples and vanilla. Beat by hand for about two minutes until well blended. Beat eggs and add sugar; gradually fold egg mixture into apple mixture and blend thoroughly. Stir in nuts. Pour into greased 10 inch tube pan or bundt pan. Bake at 350ºF for 1 hour. (325ºF for a very moist cake) Serve hot or cold with whipped cream or caramel Nut topping: 3/4 cup whipping cream, 1 cup sugar, 1 tsp vanilla & 2 TBS butter. Cook until it thickens. Beat with mixer and add 1/2 cup toasted chopped nuts. Pour over cake. |
