3 cups flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
3/4 cup vegetable oil
4 cups peeled and coarsely chopped apples
2 tsp vanilla
2 eggs
2 cups sugar
1 1/2 cups chopped nuts toasted for cake and topping

Measure the dry ingredients and sift together. Add oil, apples and vanilla. Beat by hand for about two minutes until well blended. Beat eggs and add sugar; gradually fold egg mixture into apple mixture and blend thoroughly. Stir in nuts. Pour into greased 10 inch tube pan or bundt pan. Bake at 350ºF for 1 hour. (325ºF for a very moist cake) Serve hot or cold with whipped cream or caramel Nut topping:
3/4 cup whipping cream, 1 cup sugar, 1 tsp vanilla & 2 TBS butter. Cook until it thickens. Beat with mixer and add 1/2 cup toasted chopped nuts. Pour over cake.
