Chicken with Grapes Recipe

6 boned, skinned chicken breasts
1 tsp. basil
1 tbsp. parsley
½ tsp tarragon
½ tsp salt
½ tsp paprika
¼ tsp white pepper
½ c. cake meal, flour or cracker meal
2 cloves garlic
1/3 c. white wine
2/3 c. chicken broth
1 tsp. lemon juice
1 c. seedless red grapes

Blend basil, parsley, tarragon, salt, paprika, white pepper and cake meal/flour/cracker meal in a large Ziploc bag

Coat chicken w/ herb mixture – save excess

Heat olive oil in a pan; when hot, add chicken

Brown 1 side of chicken; add garlic and sprinkle on remaining herb mixture

Brown on 2nd side

Pour on wine. Cover and cook for 5 minutes

Add broth, lemon juice and grapes

Cook uncovered for 5 more minutes

Remove chicken and grapes to a platter

Strain remaining “sauce” and pour over the chicken
