4-6 Italian squash
1 large onion diced
1 large can of plumed tomatoes
1 large potato diced
2 eggs
Oil for frying

Directions:
Directions:
Peel squash, cut in half and in then in cubes.
In Medium pot, heat oil sauté onion until tender
Add squash, tomatoes to onions and simmer until tender. Add potato. Beat eggs separately then add to mixture in pot just before it is done. About 20 to 30 minutes. Folk tender.
