3-5 pounds potatoes, peeled and chopped
1 medium onion, chopped
2-3 cloves garlic, minced
3 cups vegetable broth or bouillon
2 cups chicken broth or bouillon
1 pound mild cheddar cheese, grated
4-6 slices of American cheese
1 quart to 1/2 gallon milk, as preferred

Directions:
Directions:
Peel, chop and rinse potatoes until the water runs clear. Bring the broth to a boil and add potatoes, simmering until tender. Add onions and garlic, continue to simmer until onions are tender. Reduce heat, add milk and cheese, cook on low until cheese is melted and smooth. Puree some of the soup if desired. Serve hot.
