Davenport Hotel Coffeecake
1 cup salted butter, softened
2 cups sugar
3 large eggs
1 cup sour cream
1 tablespoon vanilla
1 3/4 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt

Topping:
1/4 cup brown sugar
1/2 cup pecan pieces
1 teaspoon cinnamon
Powdered sugar, for dusting (optional)

Preheat oven to 350 °.

Line two 9-inch round cake pans with parchment paper.

In bowl of standing mixer, cream together the butter and sugar for several minutes until light and fluffy. Blend in the eggs, stopping often to scrape down the sides of the bowl. Blend in the sour cream and vanilla. Add the cake flour, baking powder and salt. The batter will be quite loose.
Divide the batter evenly between the two lined cake pans.
Combine all topping ingredients in a small bowl and sprinkle on top of the two cakes.

Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.

Since we eat gluten-free, I substitute 1 3/4 cup of King Arthur Gluten Free Flour for the cake flour and add 1 rounded teaspoon of xanthan gum - it is delicious!!
