2 tbls. instant coffee 1 1/3 cup boiling water
1 cup Quaker instant oats ˝ cup soft butter
1 cup sugar
1 cup brown sugar, packed
1 tsp. vanilla
2 eggs
1˝ cups sifted flour
1 tsp. baking soda
˝ tsp. salt
2 tbls. cocoa

FROSTING

3 tbls. butter
2 cups confectioners’ sugar
dash of salt
1 tsp. vanilla
coffee mixture that was set aside


Beat butter until creamy. Add sugar, salt, vanilla, and coffee mixture. Beat until smooth.

Combine coffee powder and water, set aside 2 tbls. for frosting. Pour remaining mixture over oats. Let stand covered 20 minutes. Beat butter until creamy. Add sugar, brown sugar, vanilla, and eggs and mix well. Add the oats and mix well. Mix dry ingredients together and add to creamed mixture. Bake in a 9" square pan 350° for 50 minutes.
