1/4 lb. pork back or salt pork
4 garlic cloves
1 tsp. parsley
pinch of oregano
1 small can tomato paste
1 tsp. sugar
peeled fresh tomatoes

Directions:
Directions:
Dice pork into very small bits or put through a food grinder on smallest setting. Saute pork, garlic, parsley and oregano until pork is melted. Add tomatoes smashed to fill the pot. Add paste and sugar. Stir and simmer at least an hour.

When I make marinara, I am very liberal with all the spices. It's one of those recipes that you have to make a few times to figure out how you like it best. Serve over pasta with meat or shellfish.
