2 Medium red and/or green pears, peeled, if desired; cored and chopped
1 fresh jalapeno chile pepper, seeded and finely chopped
2 Tbsp finely chopped red onion
1 tsp finely shredded lime peel
2 Tbsp lime juice
1 Tbsp finely chopped, peeled fresh ginger
½ tsp salt
¼ teaspoon crushed red pepper
1 8oz round Brie cheese, chopped
8 8in flour tortillas
2 Tbsp cooking oil
Thinly sliced red pear (optional)
Thinly sliced lime, halved

1. For pear salsa, in a medium bowl, combine chopped pear, jalapeno, onion, lime peel, and lime juice, ginger, salt, and crusted red pepper. Cover and chill for 1 to 4 hours.
2. Divide chopped Brie over half of each tortilla. Remove and drain 1 ½ cups of the pear salsa with a slotted spoon; set remaining salsa aside. Place 3 Tbsp of the drained salsa atop cheese on each tortilla. Fold tortilla in half, pressing gently. Lightly brush outsides of tortillas with oil.
In a large skillet or on a griddle, cook quesadillas, two at a time, over medium heat about 4 minutes or until lightly browned, turning once. Remove quesadillas from skillet. Cut each into three wedges. Serve with remaining salsa. If desired, garnish with thinly sliced red pear and half-slices of lime.
