6 Large Russet Potatoes
1 stick butter
1 stick margarine
3/4 c. sour cream
3 c. shredded cheddar cheese (divided)
tsp. salt
tsp. black pepper
tsp. onion powder
paprika

Directions:
Directions:
Scrub potatoes clean, wrap in foil, and bake until tender - 1 hour @ 450

Take foil off and discard. Cut an oval hole in the top of the
potato, almost to the edges. Peel the skin off of the cut
portion and scoop white part of the potato into a large bowl.
Continue with all of the potatoes until only shells remain.
Place the shells side by side in a baking dish. Set aside.

To the white part of the potato add butter, margarine, 2 c.
shredded cheddar cheese, 3/4 c. sour cream, and spices.
Using a hand mixer, beat until combined but no longer. (30
sec. to a min.) Adjust salt and pepper as needed.

Fill potato shells with the potato mixture. Sprinkle tops of
potatoes with 1 c. shredded cheddar cheese. Sprinkle with
paprika.

Bake at 350º for 30 mins. or until cheese is melted and slightly
browned.
