4 small boneless skinless chicken breast
2 Lg. Beaten eggs
1/2 stick butter
1 cup or so bread crumbs
3/4 cup or more Parmesan cheese
1 small can mushroom's, drained (optional)
2 cups chicken stock
salt&pepper to taste

Directions:
Directions:
Soak breasts in beaten egg yolks overnite. Roll chicken breast in bread crumbs, coat well. Brown chicken in butter. Layer in casserole dish with mushrooms and cheese. Pour broth over top.
Season with salt and pepper
Bake @ 350 degrees 45 minutes to 1 hour.

Be sure and soak the chicken breast in egg OVERNIGHT. I serve this with long grain rice, spoon broth over rice before serving. Delicious!
