3 eggs beaten (optional - 2 eggs and 1 egg white)
add:
8 oz. grated cheddar cheese
3 tbsp. flour
1 (12 oz.) carton cottage cheese
3 tbsp. softened butter
1 tbsp. dried grated onion
1 (10 oz.) frozen spinach, thawed (or some fresh)

Directions:

Combine all ingredients and bake in greased, glass 1 1/2 qt. casserole pan at 325º for 1 hour and 15 minutes.

Can be prepared the night before.
