3 lbs Escarole,
1Pkg. Shredded Whole Milk Mozzarella cheese, 1 Clove Garlic,
2-3 Tbsp Olive Oil,
Garlic Powder (optional),
Bread Crumbs.

Directions:
Directions:
Brown Garlic in Olive Oil until golden brown. Put in cleaned and washed escarole (break up in smaller pieces). Add 1 cup water and cook until escarole is soft. When stirring, add salt & garlic powder. Strain liquid from escarole and put aside.
Put a little olive oil in a loaf pan. Pour escarole into loaf pan. Top with shredded mozzarella. Sprinkle flavored bread crumbs on top.

Bake in preheated oven at 350 degrees for approx 20 minutes or until cheese is melted and bread crumbs have browned.
