"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

16 mussels
8 scallops
2 cloves of garlic
12 shrimp
2 onions
2 red peppers
Smoked bacon
1 c. olive oil
1.4 to 1/2 tsp each: salt, pepper, basil, parsley, thyme and fennel

Directions:
Gently scrub the scallops and mussels under cold water. Put in a pan with the cloves of garlic and 1 cup of white wine. Heat at high temperature until the mossusks open. Make sure to move these around so they won't stick to the bottom of the pan. Remove from pan and take off shells. Peel the shrimp and onions. Cut the onions into quarters. Wash and slice the peppers, discarding seeds. Put the seafood and vegetables on the skewers in the following order: peppers, scallops, shrimp, bacon, mussels, and onion. Repeat the order. Mix all the herbs with the olive oil salt and pepper. Brush on the kebabs and grill for about 15 minutes, making sure to turn them several times.
