Left over carcass from a chicken
2 cups of chicken diced
1/2 cup diced celery
onions (optional)
1 cup diced carrots
Parsley flakes
1 cup rice

Directions:
Directions:
Cover chicken carcass with water simmer for 2 hours then strain
Using the strained liquid, put in a big pot with diced chicken, celery, onions, carrots, parsley and rice.
Cook until rice is done. You may need to add some chicken broth or bouillon for added chicken taste.
