1 16 oz. can sliced peaches in syrup
1 c. chopped onion
1/2 c. chopped red bell pepper
1/2 c. chopped green bell pepper
1/2 c. chopped celery
1/3 c. vegetable broth
2 T. toasted sesame oil
1/4 c. light soy sauce
2 T. rice wine vinegar
1 tsp. red pepper flakes
6 oz. snow peas
1 lb. cooked medium shrimp
1/3 c. chopped toasted almonds
Rice for serving

Directions:
Directions:
Place peaches with syrup, onion, celery. broth, sesame oil, soy sauce and vinegar in crock pot. Cover; cook on LOW for 3 to 4 hours or on HIGH 2 to 3 hours. Stir well. Add snow peas cook another 15 min on high. Add shrimp and almonds. Cook 4 to 5 min on HIGH or until the precooked shrimp is hot. Serve with rice.
