2 qt. water
1 1/2 lb. fresh shrimp
3 bay leaves
1 lemon
1/2 c. butter
6 stalks chopped celery
1 chopped onion
1/2 tsp. paprika
1 tsp. salt
1/4 tsp. white pepper
1 pt. half-and-half
1/2 c. dry sherry or vermouth
4 tbsp. tomato paste
1/4 tsp. hot sauce
1 1/2 c. flour

In a large pot bring water, bay leaves, shrimp shells, juice of squeezed lemon and lemon rinds to a boil. Simmer 20 minutes. Strain, reserving liquid . Melt butter in pot and saute celery and onion. Add paprika, salt, and pepper. Stir in flour. Slowly whisk in shrimp stock. Stir in sherry, half-and-half, and tomato paste. Add chopped shrimp and cook until shrimp is done.
