1 bunch spinach
1 can mandarin oranges
2 avocados
1 small cucumber
1 handful of craisins
Homemade croutons

2 cups cubed French or Italian bread
1/2 tsp freshly ground pepper
1/2 tsp salt
1/2 tsp minced garlic
3 T olive oil


Heat oven to 425 degrees. Combine oil, garlic, salt, and pepper in a large bowl. Add bread and toss to coat. Spread on a jelly roll pan and bake until golden, 10 minutes, stirring half way through. Cool.

Poppyseed dressing or your favorite from jar (go lightly)
