1c Cornmeal
1c Buttermilk
2 eggs
3/4 tsp salt
1/2 tsp baking soda
1/2 c bacon drippings
1-17oz can cream corn
1 1/2 lbs ground beef
1 large onion-chopped
2 cups shredded cheddar cheese
4 jalapeno peppers finely chopped

PreHeat oven 350º

Combine cornmeal, milk, eggs, salt, baking soda, bacon drippings, and corn in a bowl then set aside.
Cook ground beef until lightly browned, drain well and set aside.
Sprinkle 1 tbsp cornmeal in a greased 10 1/2 inch castiron skillet. Pour half of batter into skillet, sprinkle evenly with beef top with onion and cheese. Sprinkle pepper over top. Pour remaining batter over top. Bake for 50 mins or until golden brown. If you do not have a cast iron skillet then use a deep casserole dish, may have to cook longer.
