l - 8 oz. pkg. lasagna noodles - cooked
1/2 cup chopped onion
1/2 cup chopped green pepper
1 -8 oz. pkg. fresh mushrooms (or l small can)
1/4 cup chopped pimento (optional)
2 tsp. margarine
4 to 5 cups chopped, cooked chicken or turkey -(one whole chicken or 4-5 breasts)
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup milk
1 tsp. basil
1 1/2 cup small curd cottage cheese
1 - 1 1/2 cup grated cheddar or American cheese
1/2 cup grated parmesan cheese


Directions:

Brown onion, green pepper, pimento and mushrooms in margarine. Mix soups together with milk and basil.

To assemble - in one 9x13 inch pan - make a layer of noodles in bottom of pan. cover with chicken, pour 1/2 soup mixture over, dot with 1/2 of cottage cheese, top with cheese. Repeat layers. Sprinkle parmesan cheese over all.

Bake 350 degrees for 45-60 minutes.

This is a favorite of my family. It is easy to do, make ahead and freeze or double (one to freeze and one to eat right away.) Turkey can be substituted for chicken (a great way to use leftover Thanksgiving turkey!!) You can also cook chicken breasts in place of a whole chicken. Lite soups and skim milk can be used to cut calories.
