8 boneless skinless chicken breast halves (about
2 lbs) cooked and cubed
2 cups seedless red grapes, halved
2 cups salted cashew halves
2 celery ribs - sliced
1/2 cup sour cream - 3/4 cup mayonnaise (real)
l Tbs. tarragon or white wine vinegar
lettuce leaves optional

In large bowl combine the first four ingredients - set aside. In a small bowl combine mayonnaise, sour cream and vinegar. Pour over chicken mixture - toss to coat. Cover and refrigerate for at least an hour. Serve in a lettuce lined bowl.

I've made this chicken salad for many bridal and baby showers and serve with croissants or crackers. I don't use near that many cashews and I don't mix them into the salad - I put them on top as a garnish. The nuts would get soft if there were leftovers and to me that isn't appetizing. And don't ask me why it's call "Flock of Geese chicken salad" I have no clue!! I got the recipe from Taste of Home magazine so you know its good! Enjoy!
