Ricotta Cookies Recipe

3 eggs
2 c. sugar
1/2 c. butter or margarine
4 c. flour
1 tsp. baking soda
1 lb. ricotta cheese
1 pinch of salt

1 lb. powdered sugar
1/2 tsp. vanilla
5 tbsp. milk

Mix in order, drop on ungreased cookie sheet with a teaspoon. Bake at 375 for 8 to 10 minutes. Check to see that the tops have light brown peaks; you may have to bake a couple minutes longer. Frost with powdered sugar frosting. Dip the cookies in the frosting while they are still warm to hot. Makes about 8 dozen cookies.
