2 cups sugar
2 cups flour
3 cups grated carrots
1 cup oil
4 eggs
2 tsp. cionnamon
2 tsp. baking powder
1/2 tsp baking soda
1 tsp. salt

Directions:
Directions:
Combine all dry ingredients and sift 2 or 3 times. Add oil and mix well. Then add eggs and mix well and add carrots last and mix. Bake at 350 about 25 minutes in greased pans.

Icing:
1 box powdered sugar
1 pkg. cream cheese (8oz)
1 cube butter
1/2 cup coconut
1/2 cup chopped nuts
2 tsp. vanilla
Spread between layers and over top.
