Ingredients:  
1 can (10 3/4 oz. ) Campbell's cream of chicken soup.
1 1/3 cups of 2% milk.
3/4 cup UNCOOKED long grained white rice.
2 cups fresh OR frozen veggies (peas & carrots)
4 boneless, skinlesss chicken breast halfs (high quality)
1 1/2 tbsp. of olive oil
salt & pepper to taste
3/4 cup shredded cheddar cheese

Directions:

1. Stir soup, milk, rice, and vegetables in a 12x8 shallow baking dish.

2. Brown chicken in a heavy skillet with olive oil, salt and pepper to taste.

Place chicken on top of rice mixture, add cheese, and cover with foil.

Bake @ 350º for 45 minutes or until done. Add more cheese for an independent flare! ENJOY
