3 tbsp. butter
1/4 cup fresh jalapeño peppers,seeded and finely chopped(about 3 peppers)
1/2 cup leeks, cleaned, ends cut off,, use bottom 3 inches, 1/2 inch diced. (about 2 leeks)
3-4 cloves of garlic, minced
1 tsp kosher salt
1/2 tsp. pepper, or more
1 1/4 cups heavy cream
1 cup half&half
8 ounces cheddar cheese grated
8 ounces jack cheese grated
4-5 large russet potatoes, peeled and sliced into thin rounds.

Melt butter in a medium sauce pan over medium heat. Add jalapeños, leeks, garlic, salt and pepper and saute for 4-6 minutes, stirring constantly.

Add cream and half&half and bring to a simmer. When the cream is hot, remove pan from fire. Stir in both cheeses and mix thoroughly,until cheese has melted.

Place potatoes in large mixing bowl. Add cream mixture to potatoes, folding the sauce in with the potatoes, GENTLY.

Spray a 9-by-13- inch glass baking dish with a non-stick coating. Pour in potato mixture and distribute evenly in the dish.

Cover tightly with foil. Bake in a pre-heated 350º oven for 1 hour.

Remove foil and cook for 15-20 minutes longer, or until desired tenderness.

These potatoes are a crowd pleaser. Serve with almost any meat, they are a great compliment to your main dish. For a little extra spice, do not remove the seeds from the jalapeños, this will add excitement to the dinner party! (If you know what I mean). It's all about FUN!
