8 oz. tofu
3/4 c. sugar
1 egg
1/2 c. oil
2 tsp. vanilla
2 tsp. cinnamon
1 c. grated carrots
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
3/4 c. chopped nuts

Pre-heat oven to 325 degrees. Mix tofu, sugar, egg, oil, vanilla and cinnamon in blender. Pour into a large bowl and add carrots, flour, baking soda, salt and nuts. Stir until completely mixed. Pour into greased cake pan. Bake at 325 degrees for 45 minutes.
