16 oz (4 c.) shredded Monterey Jack cheese
3 oz. cream cheese, cut into cubes
8 oz. bacon, crisp-fried and crumbled
chopped bell peppers, onions and mushrooms to taste
6 eggs
1 c. cottage cheese
1/4 c. (1/2 stick) butter, melted
1 c. half-and-half
1/2 tsp. baking powder
1 tsp. salt

Sprinkle the Monterey Jack cheese in a greased 9 x 13 inch baking dish. Layer the cream cheese cubes, bacon and veggies over top. Combine the eggs with the cottage cheese, butter, half-and-half, baking powder, and salt in a mixing bowl and beat until smooth. Pour over the layers. Chill, covered, in the refrigerator for 8 hours or longer. Bake at 375º for 40-45 minutes or until set and golden brown. Serve immediately.
