3 lbs whole chicken
2 tsp salt
1 tsp paprika
1/4 tsp cayenne pepper (ground red pepper, but NOT crushed)
1/2 tsp onion powder
1/2 tsp thyme
1/4 tsp white pepper (though black or garlic pepper will
also work)
1/4 tsp garlic powder
1/4 tsp black pepper
1 cup chopped onions

Mix spices: rub over and into chicken WITH SKIN ON. Place chicken into ziploc and refrigerate overnight. Remove from bag. Fill cavity with onions and bake uncovered at 250 degrees for 5 hours. (Yes, you read right. This is called slow-roasting, though it is NOT the same in the Crockpot)
